At the heart of this exceptional coffee lies El Coyegual farm, perched high in the mountains near the town of La Democracia. This region is renowned for its unique microclimates, where warm winds from the Mexican valleys meet the cool, highland breezes of the Cuchumatanes during the night. It’s this remarkable natural interplay that creates the perfect environment for producing world-class coffee.

El Coyegual is a treasure trove of coffee varieties, from Marsellesa and Bourbon to Geisha and Pacamara. Each cherry is hand-picked with care by local workers, ensuring absolute precision. Following tradition, the cherries are meticulously fermented in tanks for up to 72 hours and sun-dried to lock in their delicate flavours.
