What makes coffee, specialty coffee?

Specialty coffee is coffee that scores over 80 out of 100 on the Specialty Coffee Association (SCA) scale, as evaluated by certified Q Graders. It is grown in ideal climates and carefully harvested and processed to highlight unique and high-quality flavour characteristics. Specialty coffee often prioritises sustainable and regenerative farming practices, focusing on the long-term health of the land and the future of coffee production.

How is our specialty coffee different from regular coffee?

Our specialty coffee is different from regular coffee because we work almost entirely through direct trade, which means we know exactly where our coffee comes from and personally visit the farms. This allows us to understand and support the farming conditions and practices behind each coffee. By building long-term relationships with producers, we ensure more consistent quality over time and pay fair, Bailies-specific prices that reflect the true value of the coffee, rather than relying on generic fair-trade models.

What does filter coffee mean?

Filter coffee is coffee brewed by letting hot water pass through our freshly ground beans using a paper or similar filter. This method produces a clean, balanced cup that really lets the flavours of the coffee shine. Our specialty coffees labelled for filter brewing are selected to bring out clarity, sweetness, and the unique character of each origin.

How is filter coffee different from espresso?

Filter coffee is brewed by gently pouring hot water over coffee grounds, allowing the flavours to develop slowly for a clean, balanced cup that highlights the coffee’s clarity and character. Espresso, on the other hand, is made by forcing hot water through finely ground coffee under pressure, producing a concentrated, bold shot with a rich crema. Each method brings out different aspects of the same coffee.

Can any coffee be used as a filter coffee?

While most coffees can technically be brewed as filter, we select certain beans specifically for filter brewing to bring out their clarity, sweetness, and distinctive flavours. These coffees are roasted and prepared to shine when brewed more gently, allowing the unique character of each origin to come through in every cup.
