Hunkute is our traceable Ethiopian offering of this season, belonging to the Sidama Cooperative Union, Hunkute is the most quality focused coop we know of producing excellent results. In the cup you will find beautiful Apricot aromatics alongside Peach and Jasmine tasting notes.

Located in the Wonsho district with two separate wet mills that collect cherries from around 2000 smallholder farmers in the neighbouring villages. Fertile soil, a local mix of heirloom varieties and good altitude together with the use of organic fertilizer gives this coffee a beautiful sweetness and pronounced aroma. Their coffee is grown organically, although it doesn't have organic certification.

Process

Cherries are collected in one of the 2 mills of Hunkute cooperative, washed and cleaned from all imperfections. The skin is then removed using disk pulper machines and the beans are then fermented for around 24 hours. Afterwards, they are washed in washing channels and soaked in clean, running water for a few hours. The beans are then taken to raised beds where they are slowly dried until they reach 11.5% moisture (approx. 12-16 days). After drying, the beans are left to rest for about a month before milling and transport to Djibouti takes place.

After drinking real coffee for 40 years, I found a bean which made me realise how good it should ...

I've been drinking real coffee for years and thought I enjoyed it. For a time, I even thought I enjoyed the coffee in the big chains. Then I went to Drop Coffee in Stockholm. They had at least 8 beans to choose from. For reasons I can't now remember I asked for a lighter coffee - perhaps because Sweden is famous for it's love of very dar roasts which I will never enjoy unless it's swamped by oat milk. The barista said that all the coffees were light-medium roast. So I ordered a Hunkute made by the pour-over method. My fist sip was like having coffee for the first time. It was a revelation. I'm not an expert and so won't attempt to describe the taste but I knew I loved it. Back home I searched for it and found it at Bailies who seem to be the only people who sell it. So, it's now my regular brew for pour over and drip. My only wish? That Bailies would sell me the green beans so that I could roast at home.
